Ingredients:
  • 1 cup Java House Tropical Granola
  • 1 cup Java House Crunchy Granola
  • ¼ cup melted butter
  • 2 tbsp sugar
  • 1 cup brewed Java House Premium Kenya East African coffee (cooled)
  • 1 ½ cups cream cheese (softened)
  • ¾ cup powdered sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Cocoa powder (for dusting)
Instructions:
  1. Prepare the Granola Crust:
    • In a food processor, pulse the granola until it becomes fine crumbs.
    • Mix the granola crumbs with melted butter and sugar, pressing the mixture into the bottom of a springform pan to create the crust.
    • Chill the crust in the refrigerator while preparing the filling.
  2. Make the Coffee Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese until smooth.
    • Gradually add the powdered sugar and vanilla extract, mixing until combined.
    • Slowly pour in the cooled coffee while beating the mixture until it’s smooth and creamy.
  3. Whip the Cream:
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture, creating a light, fluffy texture.
  4. Assemble the Cheesecake:
    • Pour the cheesecake mixture over the chilled granola crust and smooth the top with a spatula.
    • Cover the cheesecake and refrigerate for at least 4 hours or overnight to set.
  5. Finish and Serve:
    • Before serving, dust the top with cocoa powder for an extra touch of elegance.
    • Slice and enjoy this rich, coffee-flavored cheesecake with a crunchy granola crust!
